Evelyne: 10 words, that's short! Quality ingredients, short supply chain, traditional and artisanal recipes, and the expertise of our team!
Perhaps even more passionate about baking than Agathe herself, you are the guarantor of the continuous quality of our biscuits... can you tell us what you do?
Evelyne: I implement a number of good practices and self-checks to be carried out throughout the manufacturing process to ensure quality products that are safe for the consumer's health.
This quality is then ensured daily by our production team, who work according to established procedures: control of raw materials upon receipt, proper baking of biscuits, taste, strict maintenance of our traceability... I check all this information and after a final tasting, I give my GO to market our products.
And how do you ensure the quality of a product or future product? Besides the appealing tasting part, of course :P
Evelyne: At Agathe, a good product starts with excellent quality raw materials. We pay close attention to their origin, manufacturing method, composition... but we also ask our suppliers to commit to their products via technical datasheets and food safety standards.
Last year, after the Bio Bourgeon label for 4 of our recipes, the Dorés beurrés received the Vaud+ label. You wouldn't happen to be involved, would you? Can you explain why?
Evelyne: This label highlights Vaudois products, and 80% of the ingredients must come from the canton. We spent time researching raw materials from the canton, conducting production trials, and finally submitting our application to Vaud+, which labeled our Dorés Beurrés. Other recipes will soon follow...
By the way, what are the main challenges in setting up a short supply chain?
Evelyne: Finding raw materials! Then you still have to make sure they meet our expectations. A real partnership then needs to be established with the supplier to ensure that they have the capacity to deliver to us, in suitable containers, and to meet food safety requirements...
And what's it like to get paid to taste Agathe biscuits every day?
Evelyne: Everyone dreams of it, I think! From the morning, I already know what I'm going to taste with the delicious smell of the day's biscuit perfuming the surroundings of the biscuit bakery.
It's a ritual I never tire of; it's very pleasant. There are much worse things to taste in other fields... ;)
You must know them inside out! If you could only keep one, which one would it be?
Evelyne: They are all better than the last, but my heart beats for the Oranneigées.
